There is nothing like Beef Stew on a cold winter evening. While it’s a matter of degree, it has been pretty cold recently in central Florida, reaching the 30′s in the evening.
Beef stew is an easy dish to make but it is a little time consuming, waiting for the fibers to break down in a stew cut of meet.
Serve stew with potatoes by itself or over rice with a good loaf of crusty bread.
Ingredients:
Flour for coating
1 lb or more of stew meat cut at the grocery
3 Carrots chopped
3 stalks of celery chopped
1 large onion chopped
2 large potatoes cubed
3 tomatoes of a small can of plum tomatoes
1 cup peas
1 cup red wine
2 cups of beef, chicken or vegetable stock or broth or water
olive oil
herb like an Herbes de Provence blend dried oregano and a bay leaf
some hot sauces if you are so inclined.
Ok, may I digress here for a moment. Add some salt and pepper and herb to flour on a plate, roll your meat onto the flour and then brown in olive oil. Don’t crowd, do in batches if necessary.
Add celery, carrots, onion, salt pepper and herb and saute until a bit tender on high heat to caramelize the vegetables. Add red wine, stir and cook down a little. Add the meat. Add the stock or water to cover the meat and vegetables. Bring to a boil, then cover and reduce heat to simmer until the meat is tender – approximately 2 hours. The last 30 minutes of cooking, add the potatoes and a few minutes before serving, the peas. Season to taste with salt and pepper and Enjoy!
